What did I eat today? -January 29th


January 29th

Hello!
Woke to a very snowey road this morning. Which means..SNOW DAYYYYY!!
Super happy..lie in ahoy!!





Breakfast

My friend Becky is currently staying at mine so in the spirit of a snow day we had a proper breakfast together. Tea and Jus Rol pain au chocolate!

Yum





Lunch

For lunch I made wraps; Tofu, onions, peppers, mushrooms, bbq mango and chilli maranade, spinach, rocket, violife. Nom






I served the wrap with kale crisps and some tortilla crisps! My omni friend really enjoyed her lunch :)


Snow fun!





Tea

Me and Becky decided to go to Nandos. This was my first time going since being Vegan.
The staff were great. I had pitta and humus to start.
A veggy patty in a pitta with mushrooms, chIps and garlic bread..It was AMAZING!


So out of focus :/



Overall an extremely awesome snow day!!

What did I eat today? January 25th


January 25th

If you saw yesterdays blog post you'll understand why I am feeling delicate today!!
I didn't have breakfast as I was catching some Zs..but i did make a beautiful chilli



Brunch?




A microwave curry wrap on an ugly plate! 


Tea

I made a yummy chilli. I didnt follow a recipe i just chucked the following together;

Soya Mince
Onions
Sweet potato
Pepper
Tomato
Kidney Beans
Sweetcorn
Spinach
Mushrooms
Chilli Powder
Garlic
Nooch
Chopped tomatoes
Herbs
Spices

To make: I fried the mince and veg. I added some chilli powder whilst frying off. Then added the chopped tomatoes, kidney beans, sweetcorn and some water. Let it simmer then put in the oven for an hour.Easy and tasty.








Served with tortilla crisps, garlic bread, violife and a bit of mayo to cool it down!

Pudding

I made some cinnamon swirls..jus roll as they were going out of date thought i had best cook them!! These are vegan..I was shocked when i found out!

What did I eat today?- 22nd jan

22nd January


Hello and happy Thursday. I feel nice and refreshed from my snow day and have had a lovely Thursday. I'm in shock that its the 22nd already!! How is time going so fast!

Breakfast

The usual..totally forgot to photograph!


Lunch

I reheated a stuffed pepper, deffo a lunch i'll be doing again!! Warm, filling and very tasty

Tea

For tea I had some veg fingers..sooo nice! Risotto and salad..NOM




All in all a good day and proof that the busy vegan can still eat quick and tasty food.
Apologies for the short posts. Life is very busy!

What did I eat today?-January 20th

January 20th

How on earth is it the 20th already! This month is flying at a scary rate!!!
Just a short blog posty today :)


Breakfast:

Herbal tea, Crumpets, Bananas and biscuit butter (made to look like a smiley face)




Break time

Some chocolate!! Snacked on these beauties whilst marking!!




Lunch:

Leftover stew...totally forgot to picture it!


Tea:

Vegan Tacos, soya mince, mushrooms, peppers, onions, rocket, spinach, violife, salad cream, taco spice packet..heavenly




Hope you enjoyed my foods! Lets hope it snows tonight...i really want to eat popcorn in my pjs all day whilst doing some marking!

How to make Kale crisps

Kale Crisps

This is the easiest thing ever to make, it tastes good and its much better than your average packet of crisps.

Ingredients:

Kale
Fry Lite
Salt

Put your kale into a tray, preheat the oven. Spray with frylight. I use bbq because its YUMMMY. Sprinkle on some salt. and put in the oven until crispy.

I'm certain that this didnt need an entire blog post. But oh well
