Guess who's back..tell a friend!

Aloha Beautiful Vegans

I haven't blogged since the start of year, and now its blooming Easter weekend!! Time has flown this year and so much has happened, making blogging low on the priority list, plus the lack of a working laptop has really made blogging an impossibility. But hey..I'M BACK ON IT.....soo YAYYY..and now I intend to do some more videos too..again no working laptop made that tres difficult!

So where are we at...Its the end of march, Easter weekend, and I'm just revisiting all the things that one has been up to. I have had labyrinths, that sucked, started a new job, which is bloody awesome..found my niche i think, woo!! I've done soo much with the hudds vegans including a vegfest, Ive become an auntie and life in general is going lovely :). So onto the vegan stuff...



Becoming an auntie!!

On the 28th January Marlo Betty arrived. The most beautiful, perfect little girl. I am madly in love with her and cant wait to take her on adventures, have lots of fun!! <3 <3 <3



Brighton Vegfest:

So this years vegfest has been my absolute favourite so far. Was a beautiful day in Brighton with my wonderful chummy Linn Boo. We got the forever bus from sunny tunbridge wells, where we met Jordan and just had a fantastic day, on the beach, eating food, meeting Tim Shieff and making vegan friends :). there was a great variety of stalls, loads of space to eat, shop and in general it was a wonderful day out! :)





Huddersfield gets a vegan cafe!!!

So, we hit the jackpot in Huddersfield, from literally nowhere, a Vegan Cafe opened!! Called Goat
(Totally check them out on facebook/twitter) The people who run it are completely lush, the cafe is quirky, cute and the food is AMAZING..like literally the best cake ever!! So yup I am buzzing, the whole vegan community in Huddersfield are!!







Huddersfield Vegan Fun

As per usual i have had soo much fun with my Huddersfield Vegan crew :)


Curry Nights, Pub quiz, Harry potter fun, pizza nights, trips to Toby carvery. I literally love this bunch of people so much <3 The group is growing and growing and I couldn't be more proud to be part of it :)

 So in general, things are full of sunshine, and its such a relief to be able to say that, that for once in my life things seem to be going really well. I have epic friends, soo much vegan love in my life,  a lush job, and beautiful new niece and in general a much more positive outlook! I'm feeling really happy atm!..so yayyy

What did i eat today? January 24th

January 24th

Aloha,hope everyones had a top weekend. I may have had one cocktail to many this weekend which is my posts are a little delayed! Enjoy my saturday dining!


Breakfast

Smoothie! I literally just threw a load of fruit and veg in my blender and hoped for the best!..I was lovely



Lunch

One of my top chummies and her daughter took me a place called the Carding shed in Hepworth. It was so cute, but unfortunatly, not many vegan options. I had a chip butty with no butter and nice big glass of lemonade. Was a nice little visit, but was one of those annoying times where there wasnt much choice. One thing that i thought was rridiculous is that the prawns in the menu were labelled veggie..say what??!! Still a lot of ignorance out there! Anyways..my chip buty was Tasty!




Tea

For tea we decided to go fo curry and cocktails! YUM. Unfortunately cocktails turned into a full blown night out, our fate was decided by a coin!! Still a brilliant evening.

We went to a place called The Chilli Lounge and they were super helpful. The told me all the things i could eat and recommended some great stuff. I would highly recommend them.

What did I eat today?-January 20th

January 20th

How on earth is it the 20th already! This month is flying at a scary rate!!!
Just a short blog posty today :)


Breakfast:

Herbal tea, Crumpets, Bananas and biscuit butter (made to look like a smiley face)




Break time

Some chocolate!! Snacked on these beauties whilst marking!!




Lunch:

Leftover stew...totally forgot to picture it!


Tea:

Vegan Tacos, soya mince, mushrooms, peppers, onions, rocket, spinach, violife, salad cream, taco spice packet..heavenly




Hope you enjoyed my foods! Lets hope it snows tonight...i really want to eat popcorn in my pjs all day whilst doing some marking!

What did I eat today?-19th January

January 19th

Happy Monday!!! Hope the week is treating you well!


Breakfast


Porridge with banana and some chocolate sauce!..Nice









Lunch

I bought a packed lunch today. I was super organised yesterday and made some sandwiches.
Sage and onion slices, rocket, spinach and salad cream. Yum
Also had a banana some crisps and an alpro gingerbread yogurt. It was YUM









Tea

For tea I made a yummy stew. I am loving stew at this time of the year. Such nice comfort food.




Apologies for such a brief post, I hope everyone doing veganuary is having a top time. Youve done soo well! I think the first few weeks were the hardest. I find veganism quite simple now actually 4 months on!

What did I eat this weekend? January 17th and 18th

January 17th and 18th


Aloha.
I hope everyones weekend was just lovely! I have been very busy and therefore didn't post yesterday! I thought I would do the entire weekend in one go.

Saturday

So today I went on a meditation course in Huddersfield. I actually gave up a lie in to do this, which for me is pretty epic. I forgot to photo breakfast, but it was extremely unhealthy, herbal tea and biscuits! oops!

Lunch

I went into town after the meditation course (which was amazing) and decided that I would continue my day of relaxing by enjoying some Costa and book time. I love this. Put my headphones in, read a book and drink a bucket of soy chai latte. I cant recommend this drink enough! I also enjoyed an M &S samosa.







Tea

For my dinner (or tea as the northern folk call it)  I decided to make some vegan Hulloumi. I was super hungry from swimming and needed some comfort food.
I did this by pressing some firm tofu over night (planning is key) and making a paste out of nutritional yeast, paprika, salt, and turmeric. This was then left to marinate a bit and then fried. I served on a bagel with rocket, mushrooms, spinach and some sweet chilli. To accompany I made kale crisps. NOM NOM NOM NOM








Sunday

Breakfast was unfortunately missed today due to having several glasses of wine too many last night! My bad! I slept through, but then made a lovely lunch.


Lunch

Grilled cheese sandwich and kale crisps. I am obsessed wit kale crisps atm. They are so simple and soo tasty!





Tea

For tea I got some veggie burgers and a sweet potato. Shoved them in the oven for half an hour with a giant mushroom, asparagus, tiny leeks, broccoli and some spring onion. Sprayed with fry light. Food heaven. Served with greens! Lovely











Overall some top food this weekend!

Easy Vegan Pizza

 PIZZA

So this probably doesnt count a recipe, but this is how I made a super tasty vegan pizza. Since its friday it seems only right that one should enjoy a film and a slice of vegan yummyness!!


Ingredients:

Violife Cheese
Pizza Base mix
Garlic
Tomato puree or sauce
Nutritional Yeast
Mushrooms
Onions
Peppers
Spinach
Rocket




Firstly make a base, I use a packet mix, because , well its simple, tasty and really cheap! (especially when one is a lone diner)


Hopefully yours turns out more circular than mine. While you're making the base, preheat the oven and make sure that you have a baking tray and some baking paper at the ready.

Add your tomato sauce of choice

Sprinkle of your nutritional yeast on it

Add the veggies of your choice!


Grate some violife on that badboy

Put in the oven for around 15 minutes and add some rocket before serving

Enjoy PIZZA HEAVEN
