Vegan Tuckbox March Mini

Aloha

Its always great to find a Lovely Vegan Tuckbox in the post. The March Mini I must say has to be one of the best I've had so far! Soo many treats!

So what exactly was inside?
Soooo Many Noms
Including:

Yummy Scrummy Brownie

This was soo good!! I would recommend!

Om nom nom Brownie

Provamel Cashew Milk

I have used lots of milk from provamel and have always been impressed, again this was lovely, and i like the fact it came with a recipe card! However my favourite milk will always be apro Hazlenut! Nice to try new things though!!

Spicy Thai Peanuts
I love spicy peanuts, and wow these were spicey, but also delicious, again i would buy this!

Ten Acre when Hickory got BBQ crisps

I love ten acre crisps, they are lush and its soo nice to have the meaty flavours. I took these a snack when i met a friend who is not vegan but allergic to dairy and gluten. These really excited her and she was really impressed. Very nice flavour!..NOM

Dark chocolate covered Cocomels

Now ill admit that i didnt like the cocomels last time I got them people in my office enjoyed them more, mainly as I'm not a big coconut fan, however, these were super nice with only a hint of coconut, i think the dark chocolate must have distracted me from the taste. Overall yummy

Sarelle chocolate bar

I have seen these pop up on vegan facebook groups and never got round to trying one. I was soo impressed it was like a kinder bueno mixed with a Ferro Rocher. Pure Yum!!..didn't last seconds though ha! These can be found in tesco i believe.

ichoc Choco Cookie

I think the only way i can sum this up is AMAZING..chocolate with oreos in. It was beautiful..soo tasty and a treat i would totally buy again. Very very tasty!!

So far this has been my favourite box, full to the brim of lovely treats. Great stuff! I would wholeheartedly recommend a vegan tuck box subscription.

What did I eat today?.. January 3rd

Day 3 of this blog and I've had quite the interest. Nearly 1k page visits. Thank you to everyone who has been so supportive. The vegan community really is a magical one. Everyone is just Lovely!

Foood!:

Breakfast:

I slept in..like really slept in. Only one more lie in until I'm back at work..so I'm really making the most of it!!..So for a quick healthy breakfast I made a smoothie. I unlike others don't have a recipe for this. I just throw in loads of fruit, spinach, bit of soy milk and some juice, blend and boom..good to go. In this one I had mango, blueberries, spinach, raspberry, grapes, pineapple, apple, melon (basically I have a shelf in my freezer full of frozen fruit so I can just make a quick one)

Lunch

I've spent much of the day at my computer doing marking and planning for work, so I have a very dull lunch (actually a strong favorite) of Marmite sadwiches, asda pretend monster munch and some bourbons. Exciting!

Tea

So my final meal of the day was two portabello mushrooms on a bed of spinach with some sweet chili and some of last nights pasta  (waste nothing I say!!). Also had a brownie! Lovely!!

This did fill me up!!

Tomorrow is my last day of the holidays, This makes me sad, however, It does mean that I will be baking as my office loves some nice treats!!
Hope you're all having a top weekend!

Yummy Chocolate Brownies

Since I had nothing to do today other than be hungover I decided to make brownies!!

The recipe:

  • 5 tablespoons sunflower oil, plus extra for greasing
  • 200 g dairy-free dark chocolate
  • 170 g self-raising flour
  • 3 heaped teaspoons cocoa powder
  • 180 g golden caster sugar
  • sea salt
  • 1 vanilla pod (I used vanilla essence)
  • 230 ml unsweetened soya milk

  • Read more at http://www.jamieoliver.com/recipes/chocolate-recipes/vegan-chocolate-brownies/#eYMptqatBSrhmbuF.99

Firstly get all your ingredients together and preheat the oven at 180 degrees!

    Put on a cute apron!

    Melt your chocolate:

    Mix your dry ingredients together:

Add your melted chocolate and the soy milk and give it a good stir!:

    Put in a tray:

Put in the oven for around 20 minutes..and boom!

Oh and dont forget to lick the spoons

Put on a nice dish with some cream and you are in vegan brownie heaven!

What did I eat today?- January 1st

    January 1st

So I'm going to try and document my vegan noms every day...I work full time so i might forget, but since today is new years day and I've not changed out of my pyjamas, I thought ooh I'll document my food and take pictures!..go me!

    Brunch:

As seen in an earlier post:
Hash browns, Toast, Vegetable sausages, Tomatoes, Mushrooms, Spaghetti hoops, Sweet Chilli sauce and Ketchup. With a pint of orange juice! My poor hungover body needed this today!!

    Dinner/Tea   (if you're a southerner like me!!)

So as I have been a hungover bunny today..I was Lazy! I grabbed a pre made enchilada out of the freezer and shoved it in the oven! It was an Amys kitchen product which I bought from Holland and Barrett. It was my first time having this and it was nice, flavorsome and easy to prepare, however I remember it being nearly £3 and therefore not something id rush to buy again. With my enchiladas I had a sweet potato, some pickled beetroot, steamed garlic mushrooms, spinach, salad cream ( asda light is vegan!) and some sweet onion relish. It was really nice!!

    Pre Cooking

    Amy's Kitchen Enchiladas

The final result: Enchiladas, Sweet potato, mushrooms, spinach and beetroot

Overall this was a really nice easy meal. I do prefer to cook though, so I wont be having this again in January

    Pudding!!! (best part)

So today I had nothing to do..so I thought id bake (see blog post on how to make brownies). I used a Jamie Oliver recipe and made brownies , these make a great pudding and snack, plus i have a chum coming to stay tomorrow so these are perfect for eating with friends!

Home Made brownie with Schlagfix whipped cream on Nannys china!

Schlagfix..a wonderfully named German whipped cream for vegans. Its by far the best I've tried. I bought this from VX (Vegan cross) in London when I went back for Christmas!

Overall I've had a good day with lots of comfort food to get through that post NYE hangover!

    Nom Nom Nom

    Hope you are all recovering!!
